We’ve got a room that we currently have booked Weds-Mon. If we need to leave Sun, thus reducing the reservation by 1 night, is there a $ penalty involved? Is there a timeframe we should do this in, or would the hotel (Westin) be able to adjust it when we check in w/out a penalty? 

We want to adjust as soon as we can confirm the Sun vs Mon flight needs, so trying to sort out the deadlines.

You should check with the hotel soon and adjust your reservation if you still can. If you just up and leave Sunday they will definitely have a fee or attempt to charge you for the extra night you had reserved. I'd be surprised if they'll let you change it when you get there to check in without a fee, but if you do it now they probably shouldn't mind since it lets them potentially book that night to someone else.
